Truffles

Chocolate truffles without cream (or butter)

Recipies for chocolate truffles are common, but they always include cream, and the truffles have to be stored in the fridge. Here's an alternative.

2 x tablespoons of icing sugar
4 x tablespoons of amaretto
6 x tablespoons of ground almonds
125 gm 70% Swiss chocolate

Melt the 125 gm of chocolate in a bowl. Mix in the other ingredients. You're left with something which is malleable and can be formed into chocolate truffle size pieces.

Leave to set for a few hours at room temperature.

Coat in (more) chocolate.

Brandy can be substituted for amaretto. Finer ground almond equals smoother truffle, it can be sieved to make it finer.
